#228 Nomad Diary. 1-7 March 2025. Darrell's 65th. Southern Storm. Family Time.

Saturday. 1. Early wake up that we enjoy! DDP yoga ‘diamond lite’ 40 minute workout. One of our tougher workouts. We have easy, moderate, and hard workouts. “Diamond Lite” is Darrell’s edited version of a longer workout routine. We follow a daily routine to rotate our workouts by doing an easy, then 2 days of moderate followed by a hard workout. After our morning workout we dress and cook breakfast together. Today Darrell made his amazing pancakes with oat and barley flours and shredded apple. We top them with berries, cottage cheese, maple syrup and nuts. We each have our favorite toppings. Recently I have discovered that I love the Crofter’s Organic Wild Blueberry preserves. I have been using a couple of teaspoons of that along with some real maple syrup. Today we sliced thin pork tenderloin that we have baked ahead and kept in the refrigerator to replace bacon or sausage. It is very low in fat and lean for a protein boost. 

Sunday. 2. A Gospel meeting began at our congregation today through Wednesday. We have an invited speaker/preacher who gives a series of lessons. Today he gave 2 at the morning services and one at an afternoon service. Our weekday meeting times are at 7pm. 

Monday. 3. This morning Darrell and I had our regular morning routine and I love it! It is my favorite time of the day to wake up early, do an exercise routine and then fix breakfast together and linger with coffee. We have a beautiful view of the sky and a reflective pond from our living room, kitchen and dining rooms. I enjoy the changing sky and seeing the light of the morning and evening sky. After breakfast and some laundry, we walk over to Eric’s house. We stayed about an hour while Eric got some time alone, and we watched Owen and Esther. I did a little housekeeping to help out and plan to keep doing a little every day this week. It helps me contribute what I can and feel good helping out a little. We walked back home by noon and made our lunch. We have a shopping list formulated for a quick shop tonight while we are out. I put black beans into the instapot. There’s enough to put some in the freezer for next week and for the next several days too.

Tuesday. 4. A nice morning at our house. Walked to Eric’s at 10am. Took Owen and Esther to the playground. The weather is so windy it keeps blowing Owen’s hard hat off his head across the grass! Esther doesn’t want to get on the swing because the wind is blowing it around. We stayed for a while. Esther and I went to the little library and found her a book to take home. We read it a couple of times at her prompting. Once we got back to their house, I washed the glass windows framed within 3 interior doors. Then we walked back to our house. Darrell made us some black bean and beef chili within our protein-fiber-fat ratios. It was so good! The black beans I made yesterday are interesting because they taste slightly different than the ones I made the week before. Both brands are good, but definitely different varieties. Our gospel meeting for tonight has been canceled for weather and rescheduled for Wednesday night at 6pm. Eric and Erin invited us over for Darrell’s birthday cake and a game of cards on Friday night. Darrell’s 65th birthday is on Thursday. 

Wednesday-Friday. 5-7. Every day has been cold and sunny. A very beautiful southern winter. Each morning we do our routine exercises, breakfast, and some reading afterward. In mid-morning we walked over to Eric and Erin’s house to visit the grandkids for about an hour. We play with them with their toys, building blocks, driving trucks, having coffee parties with stuffed toys. Eric often gets some work done and has a little time alone. We walk back to our house for lunch and our afternoon. Wednesday night we had a 2 hour session at church. Thursday late afternoon Darrell got his new tooth crown. I cooked some spicy Thai chicken soup. Darrell did the grocery shopping while I called a friend. Friday night we are having a birthday cake at Eric and Erin’s. Owen and Esther have made cards and pictures as their birthday contributions for Grandpa!

Nomad Notes: 

Diet: We learned about pork tenderloin last fall when we began eating more protein. (Note about pork tenderloin: It’s very easy to overcook. I’ve been cooking it about 2-3 times a month. I overcooked the last ones and they are dry! Cook them or undercook them to 140-145 internal temperature. Let them sit and then refrigerate or freeze them for later. At breakfast we slice it thin and brown it in a skillet. When it is cooked just right, it is moist and tender! ) We use a kitchen scale to weigh our portions and track our proteins, fiber, and saturated fats among other things. We are using a diet tracking app that does all sorts of food numbers and diet calculations. We use the free version of Mynetdiary. In the last month I have read about protein needs in ‘seniors’, and the higher percentage of protein in the overall diet, etc.(I also know that there are conflicting views on protein needs, etc) I have been looking at the app macro’s percentages. Macros in the diet are amount of protein, amount of carbohydrate and amount of fat. It’s on a pie chart (lol, not edible pie!). The free version of mynetdiary has a protein target of 20% of total calories daily. It took Darrell and I some attention to get our protein up to 20% last fall. Now, I’m looking at when and how I can push my protein percentage higher. We are mainly tracking protein, fiber and fats (overall and saturated). There’s an online dietician who calls her approach 90-30-50. I happened to see this in January and I realized that it’s very close to what we are doing. The numbers vary with each of our needs, but the approach is simplified to focus on these three numbers daily: 90 grams of protein, 30 grams of fiber and 50 grams of healthy fats (limit saturated fats). It’s a challenge and interesting to see and feel the foods and the proportions of foods that help with this idea. 


Short time: I’m thinking how our time feels short until we check out of this airbnb on March 13th, a week from Thursday. We are enjoying our home time each day. Darrell has a couple of appointments coming up. His birthday is March 6th. Next Monday Jeremy’s family is scheduled to visit for 3 nights after their arrival from Brazil. While they are here I have scheduled a photographer to get our entire family pictures. Hopefully this all goes as planned and the weather cooperates for our benefit! Lol.
