500 Saturdays: Nomad Diary

Today was our more difficult 40 minute morning exercise routine. I’m glad to be able to do a morning exercise together. About every 3 days Darrell makes a new batch of pancakes. I shred the apple for his batter. We have gotten into a ‘rut’ that we both agree is exactly what we enjoy and want with eating these pancakes every day. After breakfast I put black beans in the instapot with a slightly different mix of add-ins. I recorded my new recipe for consistency. I usually make a pound of black beans about once a week. Sometimes we go through them a little faster. Today for lunch we added some measured lean ground beef that I had precooked and spiced into our bowls.   I-24 Rest Area on a tiny island in Jasper, Tennessee. Beautiful scenery, picnic area, walking area, clean restrooms. Saturday. 25. Breakfast and more visiting is compliments of Glenn and Phoebe, Darrell’s youngest brother and his wife, and get us on the road happily. Arrive to Eric and Erin’s for 2 nights.  Day 4 Road Trip. We drive 335 miles from Kingsport, Tennessee to Athens, Alabama.  3.54  Stop at TA for 2 complimentary coffees and 2 donuts. 24.59  Lunch at Cracker Barrell. 37.70  Circle K gas fill up in Chattanooga, Tennessee Dinner at Eric and Erin’s Stay 2 nights at E&E’s Erin, Eric and Owen eating a lemon (lol) at Sunday lunch. Our son Samuel, Owen (1 yr and 5 mos.) and Erin at Tzatiki’s.
