#20 and #21 March 20 & 27, 2021 "4 months is Too Long for Us!"

Here we are.  Still in Harvest, Alabama.  Maybe I've called it Madison.  They border each other.  We know our way around really well here.  We've lived in this area for 12 years.  In this particular airbnb, a nice 1 bedroom with a lovely neighborhood, giant pines, full-sized kitchen and laundry, we decided to stay for 4 months:  Jan - April.   So as we have been learning and reading about being 'nomads', we have come across this idea of tempo, timing or pacing your moves and your travel to work with you.  Since we are so new to our life as nomads, we signed up for 4 months at this place.  One of the reasons I encouraged us to stay this long is because I went to Vancouver for a full month.  So really, just Darrell is doing the full 4 months here.  He said it's too long for him.  I agree.  We want a new place to live in and we want a new neighborhood to walk around.  So we have learned this about our cur...

Pretty Roasting Veggies in our Oven!  Brocolli, Brussel Sprouts, Asparagus, Colorful Carrots, Parsnips, Leeks:  Toss in light coating of olive oil and salt.  Roast in 425 degree oven for about 25 minutes. Saturday morning pancakes by Darrell!!  He makes gluten-free pancakes now.  These are really delicious as now he has taken to adding muesli that has hazelnuts in it and shredding a fresh pear into the batter. Darrell finished his pancakes on that empty plate.  My pancakes are filled with fig goat cream cheese mixed with Icelandic yogurt, then topped with blackberry pie filling (from an Amish store), banana slices, toasted pecans (from Tom at church) and a squeeze of fresh lemon juice.  So amazing and delicious! Snapping a picture for our grandson Quinn!  We sent him a video in return for one of from his Momma. He is just past 6 months in this picture.  He is smiling big because he r...

My space for EPT appointments. I enjoy this spacious space for this intense work.  Today in Madison, Alabama.  Weather is sunny getting up to 58 degrees F.  We began Darrell's birthday celebration on Thursday night, going out to a nice restaurant and walking around the outdoor mall.  He wanted to go into the candy shop and buy a variety of little jelly beans.  What a simple request that brought him a bit of happy!  By Friday night, I had purchased a lovely Chantilly cake from Publix, with whipped cream, and fresh mixed berries in the layers of white cake with almond and orange flavors.  We enjoyed some on Friday and today at lunch with our son, Samuel at our airbnb.   For our Saturday breakfast, Darrell made his really delicious gluten-free pancakes that he is now adding shredded pear into and soaked muslie cereal.  These pancakes are really hearty and so amazing that he coul...
